Bain-marie and Food Section

Benmari or Bain-marie is a method of heating or melting a container by placing it in hot water. The Benmari method is especially preferred for foods that are in danger of burning or cutting when placed directly on the fire, such as chocolate. This slow and moderate heating method is provided with industrial kitchen equipment developed to keep the food at a certain temperature in environments such as dining halls. The Benmari method requires two containers that can be nested as a basis. The water is heated in the first container; the second container is placed on top of it so that it does not touch the water.

Heating of food is also carried out by the Benmari method. In places where mass food consumption is made, such as restaurants, restaurants, benmari type heating is performed to keep the food warm. The machines that perform this process are called benmari machines. Benmari stalls heat the water in the pool, the food is kept warm with the heated water vapor.
